Sweet potato rediscovered....

I probably eat 3-4 sweet potatoes a day. I encourage everybody, if possible, to buy them organic. The taste, texture and color are sooo much better than non-organic, and makes me feel more comfortable eating the skin as well. I've had to start buying these things in bulk I eat them so often.

Sweet potatoes are so good with cinnamon. Reminds me of pumpkin pie filling.

I have no idea why sweet potatoes give me breakouts. They are delicious too..

I LOVEEEEEEEEEEEEEEE sweet potatoe! It's part of my daily natural and cleansing diet! I do put a bit of fake bacon bits on it to enhance the flavor. The fake bacon bits are made from soy so it's not bad for you compared to the real thing.

Jamaican Sweet Potato Soup

Ingredients Print Recipe
3 1/2 pounds sweet potatoes (about 10 medium sweet potatoes)
3 Tablespoons extra virgin olive oil
2 medium onions, sliced thinly (about 2 cups)
1 cup celery, small dice
4 cloves minced garlic
1/2 teaspoon ground ginger
1 teaspoon ground turmeric
1/8 teaspoon cayenne pepper (you can always add more if you want it spicier)
1 1/4 teaspoons curry powder
1/2 teaspoon ground cumin
2 bay leaves
1 ripe banana, peeled
8 cups low-sodium, fat free chicken broth
1/2 teaspoon salt
Directions
1. Place sweet potatoes on a baking sheet and roast in a 350F oven for 2-3 hours or until the sweet potatoes are very soft. Remove from oven and let cool.
2. In a large pot, saute onions and celery in olive oil until the onions are soft (about 8 minutes). Add garlic and cook for 1 more minute. Add ginger, turmeric, cayenne, curry, and cumin. Cook for 30 seconds or until the spices are fragrant.
3. Add bay leaves, banana, broth, salt. Peel sweet potatoes and place them in the broth. Bring to a boil, reduce heat to a simmer and cook for 30 minutes.
4. Process soup in a blender until smooth. Be very careful when blending hot soup as it can come out of the blender if you are not careful. Never fill the blender container more than half way. Always start blending on the lowest speed, and cover the blender with a thick kitchen towel which you hold to the top of the blender.
5. Serve soup with spicy cilantro puree (below).
Spicy Cilantro Puree
Serves: 16
Ingredients:
2 bunches of cilantro, stems removed
1 clove garlic, chopped
2/3 cup roasted salted peanuts
2 green onions, chopped
1/4 teaspoon salt
1/4 cup lemon juice
1 serrano chile, chopped with seeds
1/2 cup water (more may be necessary)
6 Tablespoons extra virgin olive oil
1. Place all ingredients in the blender and process just until smooth. If the blender has a hard time grinding the ingredients, add more water.

Haha, the weird thing is, sweet potatoe may make my skin worse due to high glycemic index and starchiness. It isn't the best for my self declared case of sibo and leaky gut. But, in healthy individuals the sweet potato is great and tastes great!! I think it cleared you due to high levels of vitamin a

no it won't as it is rich in fiber. As long you have adequate amount of vitamin C, zinc and exercise spike in sugar should not affect you,

and it's high in resistant starch. They make resistant starch puddings and bars and other faux foods for diabetics to keep their blood sugar steady.

Sweet Potato Hummus

3 cups peeled, diced, and steamed sweet potato

1/3 cup roasted tahini

2 tablespoons olive oil

Juice of half a lemon

1 garlic clove, crushed

1/2 teaspoon garam masala

1/2 teaspoon salt

Blend the sweet potatoes while they are very hot. Add in the tahini and blend. Add in the olive oil and blend. Add the remaining ingredients and blend well. Refrigerate until cool.

Sweet Potato Gnocchi with Maple Cinnamon Sage Brown Butter (based on Mark Bittman's recipe inHow to Cook Everything and Giada De Laurentiis' recipehere)

makes 3-4 servings

 

1 lb. sweet potatoes (about 2)

Salt and pepper

1 cup all-purpose flour

1/4 cup butter

15 fresh sage leaves

2 teaspoons maple syrup

1/2 teaspoon cinnamon

1 dash nutmeg

 

Start boiling a pot of water.

 

Peel the sweet potatoes and cut into small 1" chunks. Place in a microwaveable bowl with a little water and cover. Microwave for five minutes or until the sweet potatoes are done. Drain, season with salt and pepper, and mash with a fork.

Add about a half cup of the flour and stir. Continue adding the flour in small increments until you get a dough that you can handle. You want to add as little flour as possible to keep the gnocchi from being too dense. Pinch off a small piece and drop into boiling water to make sure it will keep its shape.

Place the dough onto a floured counter top (or cutting board). Divide in half and roll each piece into a 1/2 inch wide snake. Cut the dough into 1 inch long pieces and roll over the tines of a fork. Place shaped pieces onto a floured plate without them touching one another.

Cook the gnocchi in the boiling water in batches. You don't want there to be more gnocchi in the pot than can cover the surface of the water. The gnocchi is done about a minute after it starts floating.

 

While the gnocchi is cooking, melt the butter in a separate small saucepan. Once it is melted, add the sage leaves and continue to cook until the milk solids in the butter have browned. Remove from heat and add the maple syrup, cinnamon, nutmeg, and salt to taste.
