Have To Eat Carbs/grains. What Is 'best'

I need to eat 4k+ cals/day to gain muscle, and it would go broke eating just chicken... I've been trying to commit to a low-inflammatory/low omega 6 diet (cut out peanut butter, peanuts, fast food, processed food/snacks, milk, limiting sugar). Next up is carbs. Staple carbs in my diet have been:

 

white rice

noodles

white potatoes

sweet potatoes

hamburger/hotdog rolls

 

what can I change (not eliminate) to benefit my diet? I'm confused on what is exactly bad (or worse) - the grains themselves or gluten, or something else?

 

The first recipe in this thread looks great to me (no knead bread). Is this 'OK'?

The long fermentation in the no knead bread reduces the harm from the gluten.

 

The grains are all high in omega 6 and anti nutrients. Gluten being probably the most harmful. Oats are much less harmful. Another good choice is the grain like seed buckwheat. Proper prep via soaking sprouting or fermentation reduce the anti nutrients and make nutrients more available. That applies to beans as well.

Thanks, i'll look into buckwheat (and i'm starting a batch of bread tonight).

 

i got brown rice today just thinking it would be better... just looked it up after you mentioned how grains are high in omega 6. Looks like white rice is much better in terms of omega 6 content.... do you think brown would still be a better choice because it is less processed?
