going to try and eat salmon roasted in coldpressed organic extra virgin coconut oil. i was suddenly hit by the thought if its healthy or not to use coconut oil for roasting? and what happens when it gets heated

Coconut oil is healthy no matter what.

 

Salmon might not be, if it's farmed.

 

But the least healthy thing is eating something you're afraid is unhealthy, even if it isn't.

When it comes to using high heat, it is best to use saturated fats because saturated fats cannot be oxidized nearly as easily. You should be fine using coconut oil for roasting, as it is a saturated fat.
