I think the sprouted grains would act more as a prebiotic rather than a probiotic. I could be wrong but I wouldn't look to the breads for your main source of bacteria. I'm not sure what your diet is but yogurt has healthy bacteria and if you are avoiding dairy there's coconut milk and almond milk yogurt out there now. Also it's not just fermented foods but pickled foods can also contain healthy bacteria. Pickles, miso soup, kombucha tea, kimchi are some other sources.
