I've moved this thread to the Diet & holistic health forum, where you should receive more replies.

I don't get what you are asking. Do you want to lose weight? Or gain weight?

1) don't eat unhealthy food. Eat real, whole nutrient dense food.

2). Fat is not unhealthy. Unless its in the form of vegetable oils, most grain oils, foods fried in bad oils, which means nearly every commercially prepared fried food in the first world. And trans fats like margarine, Cisco, vegetable shortening, etc. it's not made from vegetable. Fish fried in palm or coconut oil in some tropical beach somewhere is probably good. Food fried at nearly any restaurant and most homes in the United State? Bad.

Butter, animal fat, avocados, coconut oil, etc. are good.

3). Fat isn't what makes you fat.

I think most foods are ok...just gotta watch out for the obvious ones which are usually recommended when bulking such as milk/dairy, sugary foods, fast food.

I personally eat a lot of pasta/spaghetti for calories.

Tuna, nuts, peanut butter. I've seen hemp protein shakes that I might purchase in the near future. Only thing I wouldn't recommend is whey protein.

Firstly, what you gym instructor has told is bad advice.

To say only to eat protein and high cholesterol foods is a one way ticker to developing an eating disorder.

Secondly, this does not mean unhealty foods,

Aim to be balanced. Keep a wide range of foods in your diet, don't be overly restrictive. If you aim is to burn fat then you need to build lean muscle mass which will help increase your metabolic capacity. The bigger the capacity the better your body will be at burning fat.

I would suggest focussing on building muscle first (calorie surplus) then focus on burning fat (calorie deficit)

If you don't have enough lean mass you will just be skinny and won't have a great physique.

Whatever you goal you need to be sustainable. In other words, don't cut out foods because someone says it is a "dirty" or because it is hardcore. Eat nutrient dense foods and factor a treat now and then.

In all honesty, hire yourself a respected nutrition coach. If you're in the states i would seek out Layne Norton.

There are many healthy high calorie foods. High fat foods, for example. Eggs, olive oil, coconut oil, nuts & seeds, avocados, meat, fatty fish. If you consume dairy, make it whole fat dairy (but don't drink milk. Consume fermented dairy such as yogurt & cheeses). Don't fall for the nonsense about low and nonfat. Eat whole foods. Eat the whole egg. You can have whole oats. They are fairly high fat.

But you do have to determine your own personal food intolerances. Dairy, Egg whites & nuts are commonly problematic. And even if you aren't intolerant to dairy, there are many reasons why dairy should not be a big part of your diet.
