Here are my self-imposed rules for different types of meat:
1) Beef - only grass-fed beef allowed
2) Salmon - must be wild, no farm raised
3) Pork - not allowed, even if it's grass-fed (very fatty)
4) Chicken - ok
5) Bison - only grass-fed
6) Lamb - ok
7) Turkey - ok
All meat must be fresh (not preserved) - can be frozen.
The above list keeps my skin from being greasy.

A serving of pork tenderloin has less fat than beef, salmon, lamb, and dark cuts of chicken and turkey.
