Is Anyone Else Trying To Follow A Strict Diet While Working Crazy Hours?

I have really sensitive skin and have dealt with both eczema and acne for years. About a year ago, I had a terrible eczema outbreak that lasted for months. I try to avoid prescription medications (especially antibiotics and topical treatments) because I've had bad luck with them in the past, so I decided to completely change my diet instead. I used to eat lots of bread, dairy products, and sweets, but I've been almost dairy free and gluten free for a year now. My eczema cleared up incredibly quickly after I started eating more veggies and less crap, but my acne is an on-going issue. I feel great overall after working extensively on my diet, but I've had difficulty tracking my acne triggers. (I kept a food journal for many months, but I stopped writing everything down after I was basically clear. Now that I'm not clear, I wish that I had kept better track during that time.)

My skin isn't great right now, and there are several reasons for this. I went on vacation and didn't follow my diet very well, I had a UTI and my body hated me, I work a lot, and I'm newly single after a 6+ year relationship. I'm staying really positive despite all of these things, and I'm more motivated than ever to pinpoint what's causing my skin issues.

I have several different jobs that I piece together on any given day, so I typically work from 8 a.m. until 8 p.m. I'm a nanny and a freelance graphic designer, so I have access to food and kitchens all day long, but I'm super busy. I'm interested in fasting for a large portion of the day, but I need to make sure that I do it at the right timeI wake up early, go to bed late, eat little meals all day long, and I'm always hungry. I'm quite active, although I don't do any intense exercise. I should mention that I'm 5'3" and 105 pounds. I've been at the same weight since I started high school (I'm 23 now), and it really doesn't fluctuate at all. I eat lots of nuts, avocados, things cooked in coconut oil, etc., and it's important to me that I don't lose any weight if I change my eating habits.

I guess I'm not exactly sure what I'm inquiring about, but maybe some of you have advice on fasting and/or eating an interesting diet during a busy workday. More than anything, I think talking about my experience will keep me focused on finding some new solutions. I'm constantly grateful for the wealth of knowledge on this site!
