Why is this cleanser drying my skin?

Hi, I'm using a cleanser for sensitive skin, here are the ingredients

Aqua, Glycerin, Saccharum officinarum extract, Disodium cocoyl glutamate, Caprylyl Capryl Glucoside, Lactic acid, Calendula officinalis flower extract, Chamomilla recutita flower extract, Hydrolyzed rice protein, Opuntia ficus-indica stem extract, PCA glyceryl oleate, Sodium cocoyl glutamate, Sodium benzoate, Potassium sorbate, Parfum

So, as you can see, no suspiciuos ingredients, instead only gentle surfactants and hydratating stuff like glycerin, sugarcane extract, PCA glyceryl oleate. Almost all cleanser I used tend to dry my skin and leave it rough, with some dead skin even aroung oiler areas. Strangely enough, I sometimes use a sulfur soap, and this is instead quiet gentle on the skin, while it leaves it dry due to sulfur effect, it leaves it very soft and clean and not irritated. I don't really understand this, isn't soap supposed to be harsher on the skin?
