What are the healthiest flours to use for cooking?

I am thinking about getting almond or brown rice flour or some whole wheat flour (not sure if I have problems with gluten or not). What's a good and tasty one for cooking?

I'm new to the paleo diet and have been experimenting a bit and I've been grinding up my own almonds and walnuts to make flour, or meal, for baking. You can use any nut, just depends what kind of flavor you're going for. Bob's Red Mill sells a nice almond meal flour at most grocery stores.

Any flour that comes from a grain is basically the same as sugar to your body so you want to limit it (if that's what you're going for). If you're just going gluten free then there are gluten free flours I think.
