They say that the grains are hard to digest and that the yeast makes candida grow.I can see how the yeast part would be true, but what about the part on grains? strato 1 Share Posted December 3, 2009 (edited) Whether it's a whole grain or only part of a grain, the starch content of the grain still gets digested into sugar. It might take a bit longer to digest the whole grain to release the starch content, but it gets released and digested. The digestion process for carbohydrates is fairly direct - from carbohydrates to disaccharides to glucose. There are breads made without yeast called unleavened bread (eg tortillas) which should be ok. Yes... yeast in foods does aggravate candida, but the main reason bread is avoided in an anti-candida diet is because of the starch, like strato said. It just turns into sugar in your bloodstream, so it really doesn't matter if it's yeasted or not. It's the same reason that starchy vegetables such as potatoes, corn, carrots etc must be avoided as well.
