I love blending them with frozen fruits like mango or pineapple and adding cinnamon and vanilla. Yum! Figured out an easy way to get into them? haha I saw off the bottom until I see the little circle that you can pierce to drain out the coconut water. I know a lot of people just use a big knife to crack it open, but after draining out the water, I take the coconut outside and crack it open with a hammer! haha Much easier for me! It's still kinda of a pain though - guess that's why I don't often buy them. When I do though, I usually get them at a Vietnamese market - much less expensive that way.
