I've been consuming cacao nibs a few times a week which is a good source of magnesium. I always notice that I feel more stimulated and my muscles are relaxed when I get  back to work after lunch. It's quite pleasant!

As far as I can tell, only vitamin A, vitamin C, calcium & iron are mandatory for nutrition labels (plus all the other stuff: calories, fat, carbohydrates, protein, etc.). A lot of labels don't include the optional vitamins and minerals. Labels for fish don't mention anything about vitamin D. Not sure why. Maybe to save space/money?

 

At least that has come to be my understanding of it. Someone correct me if I'm wrong.

I can't say. I gave up table salt completely when I first started my diet a year and a half ago. But mostly due to health reasons in general, not to do with acne. I agree with alternativista.

Protip: fat does not make you "fat". It's the carbs like you said. Some good sources would be animal fat, fish, avocados, olive oil, macadamia nuts, eggs. Sweet potatoes are also good for getting in those extra calories. You mostly want to up your intake of meat.
