Sweet Potatoes

Sorry for starting a new topic just for this, but how do you cook your sweet potatoes? I don't want to switch the oven on just for one, and it would take too long anyway. I don't like microwaving it.

I thought about cooking several in the oven in one go but then they would be cold in the morning, and I like them warm.

I had an idea today that I could cook them in the oven in advance then wrap them in foil and stuff one down the back of the radiator at night so the warmth heats it in the morning. But the heating is only on in the morning at the moment cos we have snow, usually it isn't on. And of course no heating on summer mornings and probably not enough sun either.

What do you do? Do you think it would take too long to broil it in the morning if it was sliced? I am thinking of giving this a go first.

Bake several at a time and reheat when you want them. On chilly mornings I fire up the oven and put about 4 in while I walk the dog. If you don't reheat in the microwave, then use a steamer. I used to bake slices in my toaster oven in the summer. And I've yet to do it, but I've been meaning to shred them and cook like hash browns in some coconut oil, with onions, bell pepper, and whatnot.

There's a thread or two devoted to the sweet potato in the pinned food and recipe thread.

Thanks! I didn't even think to use the steamer. Yeah, the hash brown style sounds good also.

I cook them 2 ways:

-cut them up into 2-3inch cubes and boil , then mash them up once they're soft
-cut them into 1/2 inch slices and fry them on the frying pan them with coconut oil (then i top it with almond butter, cinnamon and blueberries)

You can (and should) also make things like sweet potato curry.

Thanks, I get mashed sweet potato with takeaway sometimes so I think I'll like this one.

Thanks, I have a potato curry recipe which is for white potatoes, I think it's called shak. We used to eat in at school here. I think the ingredients would go well with sweet potatoes too.

That sounds good, Ill have to try that. I made a lentil-squash curry the other day and it was delicious :)

Nah I just get it at a local health food store. They make it in the back of the store so I assume its nothing but almonds with nothing added

This is what I did yesterday morning, helped heat the house too! I ate mine with chili olive oil, sesame seeds and salt. I think it tastes better with butter though.

throw my 2 cents in here. I boil my sweet potatoes. Cooking in water is always the healthiest way to cook, produces the fewest carcinogens and less oxidation.

Here is a good recipe that I make:

Take 3 large sweet potatoes, half dozen eggs, and boil em. When cooked put into bowl, glass is best ya want to stay away from plastic, and then mash up eggs with potatoes Dice small onion and mix in bowl. Throw in a couple table spoons of olive or coconut oil. Then I throw in some organic pasta sauce, there's all different flavors. Then I crack some fresh organic spices over it all. then the last thing i do is i buy the bags of washed and ready herb/salad mixes and throw a bunch of and mix it all up. And then you have a really nice dish. If your a girl this will probably last ya quite a few meals, for a guy like me I can eat it all in one sitting lol

I don't peel mine, but I like eating the skin. Especially if it's crispy.
