Breakfast: Smoothie which consisted of frozen berries, coconut milk, coconut oil and greek yogurt.

I can happily report that dinner felt fine in my stomach last night. Breakfast feels fine too. We'll see what happens next time I tackle a lot of veggies, I'm kinda nervous!

Snack:
Spoonful of almond butter, small piece of almond meal pancake. Couple pork rinds.

Late lunch/early dinner: Leftover lamb with more asparagus in butter. Then went and got an ice cream cone with minime.... oh well, it was a small one and I gave her the cone blush.gif

Light dinner: Some pork sausage with tomato sauce and cabbage. With lots of crushed red pepper, yum.

Breakfast: Smoothie made from Greek yogurt, coconut milk, banana, dab of honey, cinnamon.

Lunch: Didn't really have lunch or much snacks. I ate a couple of veggie chips and had a glass of oj at one point.

Dinner: Salmon cakes over a bed of cabbage and cucumber slaw. Seriously one of the few ways I like salmon. The cucumber in the slaw is so cold and wet, it makes the dry, hot salmon really good.

Here' s the recipe because it's so yummy and easy, serves 3 or 4:

Salmon Cakes:

12oz of salmon (I use canned wild Alaskan)
2 eggs
3 green onions, chopped
1 tbs dill
2 tsp crushed red pepper flakes, more or less to your taste
1 tsp fresh ground ginger or to your taste
salt and pepper to your taste

Combine all ingredients in a bowl with your hands. Form into patties. Fry them in your choice of fat, I typically use a combo of grapeseed oil or light olive oil with butter. Fry them on med-med high heat for exactly two minutes on each side. You don't want to mess with them or flip them too early or they will fall apart.

Slaw:

2 cups shredded cabbage
1 cup shredded cucumber
1/4 cup homemade mayo

Combine ingredients, that's it!

Snack: Some slivered almonds with banana, blueberries, cinnamon and almond milk.

Sorry, away from the computer for a couple of days, now I'm going to forget everything! If I don't write down what I ate almost immediately, I tend to forget. So here's some bullet points from the past couple days.

Ate:
Green chicken curry with green and red peppers, smoothie made from raspberries, banana and kefir, almonds, piece of dark chocolate with almonds, roast beef, raw milk cheddar, spinach salad with grilled chicken, vinaigrette dressing and grape tomatoes from Bertucci's, almond milk, two Applegate hot dogs, steak.

Couple other important notes:
I ate a donut too on Saturday and got a pretty bad headache after. I also have a cold and lots of new breakouts. Idk what's going on here, and I don't know if it's logical to blame one donut on all of this... but damn, something isn't good.

Since Friday, I have quite a few whiteheads on my chin and forehead and my chest and back have broken out. I started feeling sick with the cold Sunday afternoon and I'm still pretty sick today, and still working, blah.

I think this could be related to my previous digestion issues, maybe I wasn't getting proper nutrition from my food? Not sure. However, I'm not making any drastic changes. Just trying to continue to eat well and exercise (which feels impossible right now, I have no energy and can't breathe out of my nose, yuck).

Also forgot to mention, I ate some raw hazelnuts and they made my throat very itchy and a little swollen. I've eaten them cooked plenty of times and have been fine. I read up on it and it seems like they can have the same tree pollen allergens that also bother me when I eat tree fruits like apples, peaches and cherries.

Breakfast: Smoothie made from plain kefir, frozen organic raspberries and a banana.

Snack: Piece of beef jerky then some raw cheddar and roast beef.

Lunch: Leftover curry.

Dinner: Grilled pork loin and turnips with kimchi.

Dessert: Coconut milk and mango "ice cream".

Breakfast: Small bit of leftover curry and a smoothie of Greek yogurt, raspberries, blueberries and a banana.

Snack: Almonds, almond milk with coffee, couple pieces of bacon.

Man I have to admit that summer is hard for me as far as diet goes. I'm really a sucker for frozen treats. Now I have no problem with eating healthier versions, like my coconut milk ice cream which is supper yummy, but it's hard when you're out doing summer things and there's frozen treats everywhere that are laden with too much sugar. I mean, banana splits have to be one of the most delicious things in the world! Plus it's hard with minime. Ah well, strength, I need it!

Lunch:
Avocado, roast beef and raw milk cheddar.

Ooook well my stomach felt like it was imploding again after lunch. I went straight home and passed out in my room for like three hours not wanting to move. I feel ok now. I ate a little bit of applesauce with cinnamon an hour ago and feel fine. I just took a few bites of my coconut mango ice cream because I wanted something cold (it's getting pretty hot here in MA about 85 right now and going to be 100 tomorrow).

I've been all over the Paleohacks website looking for some answers. TBH I get really overwhelmed with diet info, I really do. It's such baby steps for me. So all I can gather is that my problem most likely has to do with the following:

-Going in and out of ketosis
-Lack of stomach acid/proper enzymes
-Sudden reduction in carbs and increase in fat and protein

This all seems plausible. So what am I going to do? Try to eat more veggies, more fermented food and more seafood.

Breakfast: Pork sausage and sweet potato sauteed in coconut oil.

Snack: The rest of my breakfast. Small coffee with almond milk.

Lunch:

Dinner: Was a bunch of random snacking throughout the evening. Including: Last bit of pork loin, couple of corn chips, cucumbers in evoo and balsamic vinegar, macadamia nuts with some dark chocolate, almond milk, some frozen fruit bar made with pomegrante, blueberry, skim milk and beet sugar. I told ya I'm a sucker for frozen treats! shrug.gif

Breakfast: Hamburger and cabbage in tomato sauce with curry seasoning and cayenne, extra spicy to clear my sinuses smile.gif

Acne Status:
Doing much better! My crazy breakout is almost all healed. There is one whitehead above my lip that keeps getting irritated every time I blow my nose. Everything else is looking good though, yaaaaaay.

Also, I've reached that point where I feel people think I'm trying to lose weight. Although I've lost about 8 pounds, that's how much I always weighed before having a child. Over the last 6 years, I gradually put on a bit of weight that I imagine would only have kept happening. So if I keep losing, then yeah, I'll be worried. But right now I feel good and am trying to put some muscle on my wet noodle of a body. I'm eating plenty of fat (I think) so I may need to eat more carbs, we'll see. I just know my boss and coworker made a comment about me losing weight and then giving me that concerned look. My friends and fam haven't said anything though.

Sometimes it's frustrating when you are a naturally small framed person... it's like you're not allowed to complain or say anything because "you're so skinny". I mean, I'm 5' tall with a very petite build so there's not much to me y'know? If I was like 5'5" and weighed 97 pounds that'd be one thing. I can't even make a comment about needing to exercise because everyone seems to associate exercise with weight loss. WTF! I mean damn, yeah I'm skinny but shopping sucks for me most of the time and I have like no boobs so bra/bathing suit shopping is even worse. Sometimes I wish people would just keep comments like that to themselves.

Snacky:
Blackberries. Also had a small coffee with almond milk and a couple pork rinds. They are stale though... gross.

Pre-dinner snack:
Some macadamia nuts and dark chocolate. My latest addiction.

Dinner:
This! Grass fed hamburgers with grilled sweet potato, arugula, spinach, onion and a lil piece of raw cheddar. It was so tasty. I actually ate two patties, but that didn't make as nice of a picture wink.gif

Well here's another random list of what I ate over the weekend, oops.

Shrimp, asparagus, spinach, hamburger, mixed green salad with onions and tomatoes, Applegate hot dog, gluten free oatmeal with a dab of applesauce and maple syrup, birthday cake, watermelon, grapes, pineapple, cantaloupe, dark chocolate, macadamia nuts, coconut, kefir, coconut milk, turkey breast... I'm sure there was more but that's all I've got. You'll notice that there are some cheats in there... from Sat. at a kid's b-day party. I could have said no easily... but I didn't. I had the same thing as before happen though, after I ate the birthday cake, shortly after got a headache. I really do think gluten is my number one problem. Breakouts are mostly fine, nothing new so far but one of my white heads from before on my chin is inflamed.

Anyway, back to today....

Breakfast: Gluten free oatmeal with coconut milk, butter, cinnamon and a dab of maple syrup

Snack:
Macadamia nuts and coconut flakes and a couple dark choc chips

Lunch:
Roasted turkey breast, sweet potato and a dab of cranberry sauce (yes the sugary jiggly kind /fail)

Snack:
Munching on the rest of nuts and coconut also having an iced coffee with almond milk

Dinner: Ground beef with green, red and yellow peppers, onions, salsa verde, tomato sauce and my Mexican blend of seasoning with a dollop of sour cream on top.

Breakfast: Gluten free oatmeal with coconut milk, butter, cinnamon and splash of maple syrup.

Lunch: Roasted turkey with some potato chips fried in avocado oil. Followed shortly after by some plain Greek yogurt with raspberries.

Dinner: Salmon cakes with spinach, arugula and cucumbers and homemade mayo from light olive oil.

Breakfast: A "paleo cookie" (similar to the other cookies I made) and an iced coffee with cream.

Lunch: Turkey and potato chips cooked in avocado oil.

Dinner:
Grilled lamb with salad made of swiss chard, blackberries, tomatoes, shredded carrot and homemade dressing made of olive oil, apple cider vinegar, honey and Chinese five spice.

Dessert:
Some Hagen-Daaz (probably spelled that wrong) apple pie ice cream. Oops sideways.gif

I hear you on the skinny part! I'm naturally skinny...I can eat 2 litres of icecream in one day (dont do that anymore though), and even yesterday I polished off a medium, gluten free pizza with feta by myself. It was my small cheat for the week eusa_whistle.gif Okay...large lol. Even when I ate nothing but junk I never gained weight, I just dont!

But overall I'm trying to eat more fruits and veggies and it's SO annoying when people think I'm trying to lose weight because of it and give me concerned looks. I'm sorry that I'm trying to be healthy and that bothers you! Another thing is when people (even strangers and people at work) will ask me what size I wear or make comments about me being a size 0. If it's inappropriate for me to say 'what are you? a size 14? You're large and in charge!' then it's inappropriate for THEM to say anything about my size.

Okay rant over, but I hear ya!

How's your skin status? Are things working so far?
