I just reduce the raw carrots to carrot dust (well, slightly bigger particles than that) in the Cuisinart and then I can throw them into a wide variety of things (chicken cacciatore, risotto, etc.) and not even taste them.

Sure do if you juice'em. That's how people who claim to be eating "no sugar" get their sugar fix: juicing veggies to remove the fiber and eating high-fructose fruits. Kinda like giving up cigarettes by covering your body in nicotine patches. biggrin.gif

they do, but you gotta look at GL too - GI is measured using a fixed amount of carbs. It would be really hard to eat the amount of carbs needed to see a measurable blood sugar fluctuation.

moral of the story: carrots are good for you.

But they claim it's "safe".... means little to me, as they also claim fluoride is safe (what a joke).

Use your own discretion. I buy the bigger, organic carrots.

Baby carrots are silly anyway; they're like designer carrots or something. It all tastes the same, one's just cuter.

But boy do people love 'em.

Good info, by the way ... and awesome, as I love carrots. :D
