Simple ideas for chicken

Like probably everyone else here I love chicken. I use to make rice, vegie, chickpea and chicken mixes, but I've just decided to cut out the chicken and add in more vegetables - works out to be cheaper as well!
So basically I'm looking for some basic and quick ideas for the leftover chicken fillets I'll have each week. I guess I'd like to add in fats and fibre alongside the protein, so at this point I was thinking something with ground-up almonds and beans. Any ideas? Gluten free-staples are welcomed also (rice, brown rice pasta perhaps?)

Try a little bit of honey as well as olive oil (dipping sauces?) sprinkled with almonds.

Make a salad! Chop up the cooked chicken cold and put it in a salad full of seeds and nuts, kale, carrots... lots of yummy crunchy veggies and pour on some Udo's oil or olive oil and some balsalmic vinegar, spinkle with a bit of sea salt a pepper! Tastes amazing! And if you want some grains in there, cook some brown rice noodles and then strain them and run them under cold water and add them to you yummy salad.

-Marinate the chicken in some lemon grass, soy sauce, [honey,] and sesame seed oil. Grill, add to stir fries, or add cooked to sandwiches and wraps.
Low Fat Baked Crispy Chicken (you can find similar recipes on the net)
a) Drip the prepared chicken strips in either egg or a mixture of yogurt and water
b) Season with at least salt and black pepper (I like adding sage, thyme, and oregano)
c) Dip and crust in crushed corn flake cereal or bread crumbs
d) Bake in oven

I just try to look for chicken breast that have not been injected with high amounts of anything and cook with coconut oil to keep it safe. I eat the chicken with a salad with avacado and a dressing made of lemon juice, a raw egg, EVOO, and pepper for taste. Boring but candida diet friendly.

YEZIR a raw egg. Very good adhesive for all the flavors and serves as an
all natural detoxifying dressing.
To me it doesn't taste like anythin really mixed in with all the other flavors.

Raw eggs are used in caesar salad dressings, "real" mayonnaise, and even some dessert toppings.

Spanish/Mexican Rice
The secret is to saute the rice with the onions and garlic for a few minutes before adding the rest of the ingredients (Chicken broth, tomatoes, cumin, cilantro, chicken, chili powder, various sweet and hot peppers, etc...)

Poach/boil it with onions, garlic, etc. and then you'll have the broth for soups.

What exactly is soup broth? I'm slowly adjusting into becoming a better cook whilst changing my diet, and I keep seeing soup broth come up? Is this basically like concentrate, to which you add water/milk (non-dairy of course!) and vegies etc, and then just reheat when you eat it? Also, can soup broths be bought and if so can you get healthy ones?
I like this one. I was thinking for nuts I'll use crushed up almonds and raw cashews, go easy on them though keeping in mind the omega 3:6 ratio, seeds I have no idea (suggestions...), maybe some sweet potato, wheat-alternative noodles, a litttle balsamic v, and some lettuce and carrots. (OT- after reading the green smoothie thread I realised iceberg lettuce has no nutrition, so go for romaine!)
This will turn some heads, but I was thinking about using corn tortillas to eat some of this in a sort of kebab thing, but looked at the ingredients whilst at the supermarket and realised their bad. I'm gonna work on figuring out how to make buckwheat wraps.

none of these posts are really helpful ways on what to cook chicken with to give it flavor.
