-olive oil
Tastes delicious.
If you don't use olive oil, be sure to get some good source of fat with the salad, as many vitamins, minerals, and phytonutrients in vegetables are best absorbed with fat.

do you use fresh salmon or canned?

-Fresh corn (I prefer white) cut off the cob
-cherry tomatoes, sliced in half
-baby spinach leaves
-cucumber cut into chucks
-diced sweet onion
-diced green or red pepper
-salt and pepper to taste
-dash of ACV
Dress it with fresh squeezed lime juice, sweetened with just a touch of honey
We've also added diced grilled chicken breast to it for a complete meal. It's great in the summertime!

You also might want to consider staying away from dressing made with oils, since they are processed and virtually void of nutrition. I like to blend nuts like cashews with soy or almond milk, and then add seasonings like ACV, mustard, lemon juice, spices, etc to make a really tasty and creamy dressing using no processed oils.
Southwestern Corn and Black Bean Salad

Ingredients
• 3 each large ears of corn, husked
• 1/3 cup pine nuts
• 1/4 cup lime juice
• 2 tablespoons extra-virgin olive oil
• 1/4 cup chopped fresh cilantro
• 1/2 teaspoon salt
• Freshly ground pepper to taste
• 2 15-ounce cans black beans, rinsed
• 2 cups shredded red cabbage (see Tip)
• 1 each large tomato, diced
• 1/2 cup minced red onion
Directions
1. Bring 1 inch of water to a boil in a Dutch oven. Add corn, cover and cook until just tender, about 3 minutes. When cool enough to handle, cut the kernels from the cobs using a sharp knife.
2. Meanwhile, place pine nuts in a small dry skillet over medium-low heat and cook, stirring, until fragrant and lightly browned, 2 to 4 minutes.
3. Whisk lime juice, oil, cilantro, salt and pepper in a large bowl. Add the corn, pine nuts, beans, cabbage, tomato and onion; toss to coat. Refrigerate until ready to serve.

For snacking sometimes I eat frozen corn niblets.
I also love raw green beans. I rinse them with hot water a couple times to get any dirt off. Then I dress them with olive oil, roasted garlic, and salt. They are good because they have the crunch of chips and it makes you feel like you are snacking. Or you can have them with meat as a meal.

2 cups (handfuls) mixed baby greeens
2 tbsp slivered almonds
1 cut up pear (not too ripe.....better a little crunchy)
Dress with balsalmic vinegar and olive oil.
I had this for lunch today:
1/4 cup kidney beans
1/4 celery (diced)
1/4 carrot (diced)
1/4 onion (diced)
Dressed with balsalmic vinegar and olive oil
I also like a big mixed salad with baby greens, carrots, celery, peppers, cucumber, sometimes radishes and mushrooms, and some grilled turkey or chicken breast......usually dressed with balsamlic vingarette....

hearts of romaine salads
with canned salmon added , and Carrots sliced , and Avocado then finally i add extra virgin Olive oil
Meh it taste great.
Gonna try Salads mix.. red cabbage , ice berg... etc

serves 4
1 head of romaine lettuce
4 garlic cloves minced
10 finely sliced anchovy filets
3 egg yolks
juice of 1/2 lemon
2 tablespoons balsamic vinegar
2 teaspoons Dijon mustard
5 tablespoons olive oil
4 slices bacon
6 oz. shredded Parmesan
salt and pepper to taste
1 teaspoon Worchestershire sauce
Wash and drain lettuce. Cut the leaves into about 2-in. pieces.
Chill before serving.
In blender, place garlic, anchovies, egg yolks, lemon juice, vinegar, Worchestershire sauce and mustard. Blend until thickened. Little by little, add olive oil. The dressing should be very creamy. Add salt and pepper (optional). Chill 30 mins.
Fry bacon over low heat in a non-stick pan until it is a little dry. Allow to cool, then chop into very small pieces in food processor.
To serve, place lettuce on large plates. Evenly add dressing. Generously sprinkle with Parmesan. Finish by adding bacon bits.

-a sprinkle of low fat or non fat mozerella
-cucumbers
I sometimes will add avocado and/or sliced almonds.
I make my own dressing in a little container using red wine, or salad vinegar with about a 1/2 tbsp of olive oil then add some ground pepper and some fresh minced garlic and a few squirts of lemon juice. So good.

Chicken strips or steak strips.
Ranch dressing
And mexican shredded cheese.

Romaine, spinach or mesclun with chopped apples or pears. Sprinkle with nuts and seeds, especially pumpkin seeds. Use oil and vinegar or lemon juice. But it doesn't even need a dressing for flavor, I just do it for the olive oil. A little fat makes some nutrients more absorbable.

Add a sprinkle of dried cranberries
Add chopped pecans
Add finely chopped red onion
Add cubed cucumber (optional)
This is a great salad that is even better the next day when the nuts soften and the cranberries re-hydrate.
I have a ginger-soy dressing to go with it...delish!
Another salad would be
Baby spinach...organic tastes best
Add small strawberry slices
Add fennel
Add sweet romaine hearts
This is really nice with a raspberry or balsamic vinegar dressing.
A nice salad dressing would be my home-made caesar!
One whole egg
Chopped cooked bacon
Parmesan cheese
Lemon juice
Worchestershire sauce
Olive oil
Combine all ingredients and mix into 1 head of freshly washed and chopped romaine lettuce.

I hate or am allergic to pretty much all salad dressings on the market. So every night, I make up "guacamole" to mix with my salad, and that's my dressing. I love it!
Here's what I use:
- 1 whole advocado
- A squeeze of lemon juice
- Salt to taste
- 1/2 teaspoon of garlic powder
Mix and mash all together with a fork.
Oh, and sometimes I like to add flaxseeds into the mix.
