just wondering if anyone knows which vegetables can be eaten raw?
I've read that raw foods are more nutritious and that cooking them will cause a loss of protein and enzymes in the
vegetables. The lost enzymes can aid digestion.
I normally cook my food(usu steamed/stir fried in a wok). But the other day i went to a friends party and they had vegies for snacks with dip(a white dip, i don't know the name, but it tasted great).
he served raw broccoli, celery, and small ball-like tomoatoes.
I have to admit raw vegies tasted better than i thought(esp with the mysterious white dip),
I mean i had raw vegies before in a subway sandwich once in a while but i've never consciously thought about it til now. I'm used to fully cooking my vegies.
the raw vegies i know that can be eaten (through mental images and past experience)raw are:
lettuce
tomatoes
broccoli
carrots
onions
cucumber
celery
pepper(red and green that i know of)
can anyone add to this modest list of mine?

No, because enzymes are used by plant to get ripe
Just like you use the enzyme you produce the plants use the enzyme they produce so you can't really increase your digestive enzyme from outside, you must stimulate the production from inside if your think there's a shortage of them
Certain phytochemicals become more bioavailable when they're cooked like lycopene in tomatoes so in a way cooking (like juicing and blending) allow us to get even more of the beneficial properties of plants and yet raw is great because certain nutrients are lost when cooked and foods become too soft and we need to chew to keep our teeth strong and our face muscles toned. So I would eat raw those vegetables that can be eaten raw and would cook those vegetables that can only be eaten when cooked and would eat both cooked and raw vegetables daily

thanks buddy, this will help me alot being on this raw diet and all. I wish we could have a raw thread pinned with foods and recipes. I don't think enough people care though. But you'd be surprised how good raw can be. Like I make this candy like snack. I guess its like a pie in a way.
So anyways its got brazilian nuts, sunflower seeds, raw honey, and dried blueberries. very tasty snack. great refridgerated
