Is it because of the yeast? the wheat? the sugar? the iodine?
what if I make my OWN bread without: yeast, wheat, sugar, iodine. ?
This was my idea:
spelt flour
baking soda (special one)
sea salt
oats
sesam
et voila. is this healthy??
or is bread bad because of the way you bake it?

i guess bread is bad if its white. white bread has many starches and is usually not the healthiest for ur digestive system. i usually eat grain/wholemeal bread. i guess making ur own bread with the ingredients u mentioned will be pretty healthy... but remember not too add too much salt coz of the sodium content.

Moderately healthy because after all bread is not the healthiest thing one could eat, not even when it's whole
A reason why bread is considered bad and correlated in several studies with the bad effects of high insulin levels is that finely ground flour bread is usually made with has still an high glycemic response
So you'd benefit from adding coarse fibers to your bread or using a real whole flour which unlike flour is all uneven and fibrous
I think home-made bread is the healthiest bread and your recipe sounds good but I don't know since I've never made it.
There are also bread machines who cost 30$ and you put flour, water, baking soda and it makes the bread for you including cooking

Baking would supposedly form acrylamides. Acrylamides is a powerful poison that is correlated with cancer incidence and is produced when carbohydrates are cooked at high temperatures. Boiling, pressure cooking and steaming don't effect acrylamide formation while baking, grilling, frying do
French fries are therefore the most poisonous edible food
I think that the smaller the bread shape, the quicker the cooking and the lower the temperate the better
Google acrylamides to look for further information about bread and acrylamides and see whether there are suggestions on decreasing it formation when baking

Like Danny89, I think people say bread isn't the best carbohydrate one can eat because of its high/moderately-high glycemic index (GI). GI values give a general idea of how fast a particular carbohydrate breaks down into glucose. By eating high GI carbs, one's blood glucose levels rise rapidly and that isn't a good thing.

Bread is usually made out of flour, which has such a high surface area for digestion that it spikes your blood sugar.

Eat sprouted Ezekiel bread.

Why bread might be bad depends on the person. Some people's blood sugar levels are really sensitive to starch and sugar - for them it's the refined flour that is bad. Others (like me) have a gluten intolerance, meaning our body can't handle one of the proteins in wheat. These are the two main arguments against wheat. Of course, everyone is different. I don't eat wheat because it makes me feel sick - I get painfully bloated and very sleepy after eating it (my stopping eating wheat had nothing to do with acne)..I no longer have acne, which is partially due to diet and partially due to changes in skincare regimen. You may or may not be sensitive to it however.

Takes a little getting used to but after that it's good, one of the healthiest breads you could get. It's all sprouted w/ no flour, basically they take six grains and legumes and sprout them to create a complete vegetarian protein source and then make bread out of it but process it at much lower temperatures to ensure theres still nutrients. Sprouted supposedly makes gluten a lot easier to digest as well as increases the nutrient content and neutralizes phytic acid which binds to some minerals and prevents their absorbsion. Anyways I guess I have a problem with gluten so breads for the most part = off limits for me.

If you ask me, there really is no "Safe" bread: IE, bread that doesn't spike your blood sugar in a high way.
But then again wheat is probably the #1 cause of blood sugar spikes since it is consumed so often (and has a high GI).
